Located in the Heritage Listed Nightcap National Park, we trek through the rain forest to reach the stunning Protesters Falls.
]]>A little country cooking lessons from the authority - Aunty Janet! Date scones with all the trimmings
]]>It's a long standing tradition that at least once (more if your lucky!) during the visit a tray of freshly baked scones will appear for morning tea. It will be either the fluffy white scones or (our favourite) date scones, served with a range of toppings that include butter, fresh cream, homemade jam and Vegimite, and best enjoyed on the large verandah overlooking the macadamia farm with a pot of tea.
Oh and if you're wondering how to make these delicious scones, the recipe can be found at the bottom of this post ;)

The path to the lighthouse is just up from the gorgeous Wategos Beach and we easily made it up but unfortunately it was too late to see inside though the view of the coast line more than made up for it. We decided to take the path less travelled on the way down and followed the winding Cape Byron Loop Walk where we were treated to a brilliant setting of the sun over Byron.

We spent a while gazing out at the land and mesmerised by the water flow cascading over Minyon Falls to a deep gorge roughly 100m below. The tops of the cliffs were forested with all sorts of native Australian flora and we spied wattles and bottlebrush plants as well as eucalypts, blackbutt and scribbly gum trees.
After soaking up the spectacular landscape we decided it was high time we take a soak in the beautiful natural pool at the top of the falls filled with clear and pure water straight from the earth. Such an amazing place to unwind.

]]>On the drive up from Sydney we quickly catch up on a few Aussie basics that include a swim at Emerald Beach and a Burger with the Lot that we washed down with a ginger beer. We cruised through the rolling hills of Rosebank until we finally reached a quaint little macadamia nut farm, our home away from home, and we kicked back on the deck where an icy Cooper's Sparkling Ale was waiting for us when we arrived.
